Edamame Hummus

Creamy, rich, beautiful, and uniquely satisfying, this edamame hummus may make you question chickpeas forever.

 

 

 

Prep time: 5 minutes

 

Cook time: 5 minutes

 

Serves: 10

 

 

 

Ingredients

 

  • 2 cups shelled edamame (I like using the frozen shelled edamame from Trader Joes)

  • 3 tbsp olive oil (plus more for garnish)

  • 2 tbsp lemon juice

  • 2 tbsp tahini

  • 1/2 tsp cumin

  • 1/2 tsp paprika (plus more for garnish)

  • 1 tsp salt

  • 2 cloves crushed garlic

 

 

 

Instructions

 

  • Place 1 tbsp of olive oil in a large fry pan on medium heat and add shelled edamame

  • Cook and stir occasionally until completely defrosted and heated through out

  • Place edamame in blender

  • Add 2 tbsp olive oil, 2 tbsp lemon juice, 2 tbsp tahini, 1/2 tsp cumin, 1/2 tsp paprika, 1 tsp salt, 2 garlic cloves, and 1/4 cup of water

  • Blend on high until smooth or desired consistency is reached

  • Pour into serving bowl and garnish with paprika and olive oil
