Remove the pit from all dates by slicing off the stem and then slicing down the pit long ways
In a bowl, combine 2 tbsp almond butter with 1/4 tsp cinnamon, and 1/8 tsp each of nutmeg and cayenne
Using a butter knife or small spoon, fill the center of each date with almond butter mixture
Place about 2 cups of water into a medium sauce pan on high heat. Place a glass or metal bowl on top of the sauce pan to create a double boiler.
Break up and add 2 oz. of dark chocolate and stir until completely melted. Remove from heat.
Roll dates in melted chocolate until covered, then remove and place on wax paper.
Sprinkle dates with course sea salt.
Place in fridge and let cool until hardened (30 minutes to 1 hour)
